Our Story

The concept of "Beer x Knives" was born precisely because the brewery is located next to the knife factory.


We make beer with the hope that the names and labels of our beers will serve as an opportunity for people to learn about cutlery culture, or that cutlery will lead to beer.

The Beginning

It all started when I was working as an office worker in Osaka City. I was amazed at the variety of beers I encountered at a craft beer specialty store and thought, "There are so many different types of beer in Japan!"

Later, when I visited my husband's hometown of Arizona, I was struck by the sight of craft beer lined up all over the city and how the craft beer culture had become a part of everyday life.

"I want to be on the manufacturing side someday."

However, due to the cost, location and complicated procedures, opening a business seemed like a distant dream

The Shift

The turning point came just before the coronavirus pandemic.

The cutlery sales company where my husband works opened a new manufacturing base in Seki City, Gifu Prefecture, and my husband was appointed as the new manager. We were also able to rent a room in the manufacturing factory, so we decided to start a brewery.

I left my previous job at the end of 2021. I attended seminars, traveled to breweries around the country for training, and built connections with people in the industry.

My experience working at Kamado Brewery in Mizunami City, Gifu Prefecture and TWO RABBITS BREWING in Omihachiman City, Shiga Prefecture was a great help in opening my own brewery.

The First Pour

The brewery was completed in June 2024, and the license was obtained the following month, launching BLADE FACTORY BREWING.

Immediately after launching, we struggled with the unfamiliar equipment and environment, and it was difficult, with my husband and I coming up with creative solutions and getting advice from other breweries. However, we gradually got used to it and were able to make our own beer.

When I make beer, I think about the recipe based on whether the beer will taste good in a pint. I like beers that make the most of hops, so I mainly make American-style beers, but I would like to try a wide range of genres without being bound by convention.

We incorporate the world of blades into our beers, such as our sharp lager "Yanagiba," which pairs well with sashimi, and our IPA "Gyuto," which pairs well with meat dishes.

What Lies Ahead

Within six months of opening, people in Seki who had no idea about craft beer had become regulars, and craft beer lovers also frequent the taproom.

We have new members joining us in 2025, so we hope to further strengthen our brewing skills and make even more delicious beer.

And we will do our best to allow more people to enjoy Seki cutlery and beer !

Just like knives are an essential part of everyday life, we want our beer to be a part of your daily life.
